This is a great side on its own but goes very well with the Ropa Vieja Stew. If you don't like the heat of the jalapenos you can omit them from this recipe.
2 lbs sweet potatoes, peeled and cubed
3 Tablespoons unsalted butter
1 1/2 Tablespoons brown sugar
1 jalapeno, seeded, minced
Salt & Pepper to taste
Boil the sweet potatoes in a large sauce pan of salted water until tender, about 15 minutes. Drain and return potatoes to the pan and dry briefly over medium heat, stirring constantly. Mash butter and sugar into potatoes using a potato masher.
Stir in minced jalapeno and season with salt & pepper.
