Chickpeas with Broccoli and Bacon



Healthy, filling and really delish. This dish yields 4 servings and only has 260 calories per serving!

3 cups frozen broccoli
1 Tablespoon Olive Oil
6 slices center-cut bacon, chopped
1 1/2 cups onion, chopped
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper
6 garlic cloves, thinly sliced
1 16oz. can of chickpeas (garbanzo beans), rinsed and drained
1/4 teaspoon Kosher salt
1/4 fresh cracked pepper
2 oz. Pecorino Romano Cheese

Cook broccoli in a large pot of boiling water or microwave until tender and crisp, drain.

Heat a large skillet over medium-high heat. Add the olive oil to the pan, swirl to coat. Add bacon; saute 3 minutes, stirring frequently. Stir in onions, oregano and red pepper; saute 4 minutes or until onion begins to soften, stirring occasionally. Add garlic; saute 30 seconds, stirring constantly. Add chickpeas; saute 1 minute. Stir in broccoli, salt and pepper; cook 2 minutes or until thoroughly heated, tossing to combine.

Shave Pecorino Romano and serve warm.
