This is a simple and basic marinara sauce that is perfect with fresh spaghetti, stuffed pasta, pizza, etc.
2 tablespoons extra virgin olive oil
5-6 garlic gloves, minced
6-8 ounces red wine
3 28 ounce cans of whole tomatoes (try using three different kinds for a more diverse flavor)
3 tablespoons fresh basil, chopped
1 tablespoon fresh oregano, chopped
1 6 ounce can of tomato paste
Kosher salt
In a large stock over medium high heat add in extra virgin olive oil. Once the olive oil is heated (2 minutes) add the minced garlic; make certain that the garlic does not burn. Stir the garlic and add in red wine. Allow the alcohol to cook off; about 3-4 minutes. Add in the 3 cans of tomatoes; stir. Add the basil, oregano and a dash of salt (you can add more salt as the sauce simmers). Add can of tomato paste. Turn the heat down to slow and let the sauce simmer for an hour.
With a potato masher or a stick blender break up any remaining whole tomatoes.
Continue to let sauce simmer for another hour checking it for taste, add salt or more herbs if desired.
