Summer Vegetable Kabob











Sure, you can always get fresh vegetables but in the summer they just taste better. You have your farm stands on the side of the road or your local grocer is carrying what appears like the freshest tomatoes, peppers and corn. You get them home and then what?! Here is an easy and delicious what to prepare all those fresh vegetables that you feel you just have to buy.

1 Vidalia onion
1 green pepper
1 red pepper
1 yellow squash
Mushrooms
2-3 tablespoons extra virgin olive oil
fresh herbs (thyme, parsley, sage, oregano, chives, etc.)
Sea salt
Fresh ground pepper

Slice the vegetables into equal sizes (yes it's hard because they are all such different shapes but you need to use your best judgement. For instance quarter a small onion or slice even smaller portions for a larger onion. Slice a squash a less than a inch.)

Place the vegetables on a skewers and place each skewers on a roasting pan. Pour olive oil on the onions, season with salt and pepper and then apply the chopped fresh herbs.

Let stand for at least 30 minutes.

Place skewers on the grill over medium heat and turn every 1-2 minutes. You will see when it is time to take them off the heat. If the rest of your meal is not ready, place the vegetables in a 200 degree oven to keep warm.

Serve with your favorite main dish!
